Homemade granola
Most store-bought granolas are ultra-processed foods that I have stopped buying now ever since I tried making my own a year ago. I love homemade granola because it is super easy and quick to make, nutritious and it honestly tastes so much better than the commercial one.
I usually serve it with milk or yogurt as breakfast or for an afternoon snack. Here is my recipe of the granola that I like to make. It has an exotic flavour due to the coconut oil and the shredded coconut. But if you are not a big fan of coconut, you can simply omit the shredded coconut and use another vegetable oil such as canola oil.
Preparation time: 10 minutes
Cooking time: 35 minutes
Quantity: 6 cups
Ingredients
- 3 cups large flakes
- ½ cup unsweetened shredded coconut (optional)
- 2 cups unsalted nuts of your choice (walnuts, almonds, cashews, pecans)
- ¼ cup chia seeds
- ¼ cup coconut oil or any vegetable oil of your choice
- 1/3 cup maple syrup or honey
- ½ teaspoon cinnamon powder
- ¼ teaspoon salt
- ½ cup dried fruits of your choice (cranberries, raisins, chopped dates, apricots, etc.)
Instructions
- Preheat oven to 325◦ F. Line a baking sheet with parchment paper and set aside.
- Combine the oats, nuts, coconut and chia seeds in a bowl and mix well.
- Add the oil, maple syrup, salt and cinnamon powder to the mixture of oats and mix well in order to coat the oats and nuts thoroughly.
- Transfer the mixture to the baking sheet and spread evenly.
- Bake for 25 minutes.
- Turn the baking sheet around to change its direction so that the granola cooks uniformly for an additional 10 minutes.
- When the granola has cooled down, add the dried fruits and mix well.
